Follow the below-listed steps to remove an old email from your Apple ID.

  1. Open Settings.
  2. Click on your Apple ID card at the top.
  3. Pick on Name, Phone Numbers, Email.
  4. Select Edit. Click on the red mark next to your old email to delete it. 
  5. Select to continue on the window that appears.
  6. Enter the email you would like to use instead.
